  • 2 lbs ripe tomatoes, halved
  • 1/4 cup extra-virgin olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, whole
  • 2 cups low-sodium vegetable broth
  • 1 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Arrange tomato halves cut-side up on a baking sheet. Drizzle with olive oil and season with salt and pepper. Add whole garlic cloves. Roast for 30-35 minutes until caramelized.
  2. In a large pot over medium heat, add olive oil and diced onions. Sauté until translucent (about 5 minutes). Stir in fresh basil.
  3. Transfer roasted tomatoes and garlic to the pot. Pour in vegetable broth and simmer for 10 minutes.
  4. Blend the mixture until smooth using an immersion blender or regular blender (be cautious of hot splashes). Return to low heat.
  5. Taste and adjust seasoning as needed. Stir in heavy cream if desired before serving hot.
