- 1 cup bell peppers, chopped (assorted colors)
- 1/2 cup red onion, thinly sliced
- 1 cup zucchini, thinly sliced

- 1 cup shredded part-skim mozzarella cheese
- Balsamic glaze (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss the chopped bell peppers, sliced zucchini, and red onion with olive oil, oregano, and a pinch of salt.
- Spread the seasoned vegetables on a baking sheet and roast for about 20 minutes until tender and caramelized.
