  • 1 cup bell peppers, chopped (assorted colors)
  • 1/2 cup red onion, thinly sliced
  • 1 cup zucchini, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 cup shredded part-skim mozzarella cheese
  • Balsamic glaze (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss the chopped bell peppers, sliced zucchini, and red onion with olive oil, oregano, and a pinch of salt.
  3. Spread the seasoned vegetables on a baking sheet and roast for about 20 minutes until tender and caramelized.
