- 2 lbs Yukon Gold potatoes, thinly sliced
- 2 large yellow onions, thinly sliced
- 2 cups Gruyère cheese, shredded
- 1 cup heavy cream
- 4 tbsp unsalted butter
- 1 tbsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish.
- In a skillet over medium heat, melt the butter. Add sliced onions and sprinkle with salt. Cook slowly for about 20 minutes until golden brown.
- Layer half of the potatoes in the greased baking dish, followed by half of the caramelized onions. Sprinkle with thyme and half of the Gruyère cheese. Repeat the layers.
- In a bowl, mix heavy cream with salt and pepper. Pour over the layered bake.
- Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes until bubbling and golden.
