- In one bowl, whisk the egg; in another bowl, combine cornstarch with salt and pepper.
- Dip chicken pieces in the egg mixture, then coat with cornstarch.
- Heat oil in a skillet over medium-high heat until shimmering.
- Fry chicken until golden brown on all sides (about 3-4 minutes per side).
- In a saucepan, combine soy sauce, honey, sesame oil, rice vinegar, and optional Sriracha; warm while stirring.
- Return fried chicken to the skillet, pour sauce over it, and toss until evenly coated.
