  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups fresh vegetables (bell peppers, red onion)
  • 4 whole wheat pita breads
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber, grated
  • Juice of 1 lemon
  • 2 tbsp fresh dill or mint (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the vegetables into bite-sized pieces.
  3. In a large bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Coat the chicken breasts in the mixture.
  4. Place the chicken on one side of a sheet pan and arrange the chopped veggies on the other side.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. While baking, combine Greek yogurt, grated cucumber, lemon juice, dill/mint (if using), salt, and pepper to make tzatziki sauce.
  7. Once cooked, slice open warm pitas and fill generously with chicken and veggies. Top with tzatziki sauce.
