- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 cups fresh vegetables (bell peppers, red onion)
- 4 whole wheat pita breads
- 1 cup full-fat Greek yogurt
- 1 medium cucumber, grated
- Juice of 1 lemon
- 2 tbsp fresh dill or mint (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Chop the vegetables into bite-sized pieces.
- In a large bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Coat the chicken breasts in the mixture.
- Place the chicken on one side of a sheet pan and arrange the chopped veggies on the other side.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- While baking, combine Greek yogurt, grated cucumber, lemon juice, dill/mint (if using), salt, and pepper to make tzatziki sauce.
- Once cooked, slice open warm pitas and fill generously with chicken and veggies. Top with tzatziki sauce.
