  • 1 lb shrimp, peeled and deveined
  • 1 lb Andouille sausage, sliced
  • 1 cup bell peppers, chopped (mix of colors)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning (adjust to taste)
  • 2 green onions, chopped for garnish
  • 2 tbsp olive oil

Instructions

  1. Rinse the rice under cold water until the water runs clear. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions, bell peppers, and garlic until soft (about 5 minutes).
  3. Add sliced sausage and shrimp; cook until shrimp are pink (about 3 minutes).
  4. Stir in rinsed rice and chicken broth; combine well.
  5. Season with Cajun seasoning, bring to a boil, then cover and reduce heat to low.
  6. Simmer for about 20 minutes or until liquid is absorbed and rice is tender. Fluff with a fork and garnish with green onions before serving.
