  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1 bell pepper, chopped
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil, chopped
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Prep your ingredients by washing and chopping the veggies into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Season chicken breasts with salt and pepper. Add to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  4. Remove chicken from the skillet and sauté the chopped veggies (bell pepper, zucchini, and cherry tomatoes) in the same skillet for about 5 minutes until tender-crisp.
  5. Return the chicken to the skillet along with minced garlic and lemon juice. Stir gently to combine.
  6. Just before serving, sprinkle crumbled feta cheese and fresh basil on top.
