- 4 boneless, skinless chicken breasts (about 1 lb)
- 6 cups fresh romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh or canned)
- 1 ripe avocado, sliced
- 2 tbsp fresh lime juice
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- Preheat grill or skillet over medium heat. Season chicken breasts with cumin, chili powder, salt, and pepper. Grill for about 6-7 minutes per side until cooked through. Allow to cool slightly before slicing.
- While the chicken cooks, wash and chop romaine into bite-sized pieces. In a large bowl, combine chopped lettuce, cherry tomatoes, red onion, black beans, and corn.
- In a small bowl, whisk together lime juice, chopped cilantro, olive oil, salt, and pepper. Adjust seasoning as needed.
- Add sliced chicken and avocado to the vegetable mixture. Drizzle with dressing and gently toss to combine.
