  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 6 cups fresh romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or canned)
  • 1 ripe avocado, sliced
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with cumin, chili powder, salt, and pepper. Grill for about 6-7 minutes per side until cooked through. Allow to cool slightly before slicing.
  2. While the chicken cooks, wash and chop romaine into bite-sized pieces. In a large bowl, combine chopped lettuce, cherry tomatoes, red onion, black beans, and corn.
  3. In a small bowl, whisk together lime juice, chopped cilantro, olive oil, salt, and pepper. Adjust seasoning as needed.
  4. Add sliced chicken and avocado to the vegetable mixture. Drizzle with dressing and gently toss to combine.
  5. Serve immediately for the freshest taste.
