Ingredients

Scale
  • 2 cups sweet potatoes (peeled and chopped)
  • 2 cups carrots (peeled and chopped)
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cups low-sodium vegetable broth
  • 1 tbsp fresh ginger (grated)
  • 3 cloves garlic (minced)
  • 2 tbsp lime juice (freshly squeezed)
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

  1. Prepare your ingredients by peeling and chopping the sweet potatoes and carrots into even pieces.
  2. In a large pot over medium heat, add olive oil and sauté minced garlic and grated ginger for about 2 minutes until fragrant.

  5. Stir in coconut milk and lime juice, adjusting seasoning as needed.
  6. Serve hot, garnished with fresh cilantro if desired.
