  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix granulated sugar and vegetable oil until smooth. Add eggs one at a time, mixing well after each addition. Stir in pumpkin puree and vanilla extract.
  4. Gradually combine dry ingredients into wet ingredients until just mixed.
  5. Fill cupcake liners about two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Allow cooling slightly before frosting with cream cheese frosting.
