  • 4 mini pumpkins (about 1 lb each)
  • 1 lb lean ground turkey or sausage
  • 1 medium sweet onion, finely chopped
  • 2 stalks celery, chopped
  • 1 cup seasoned bread crumbs
  • 1/4 cup low-sodium chicken broth
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh sage, chopped
  • 1/2 cup pecans or walnuts (optional), chopped
  • 1/2 cup shredded sharp cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cut off the tops of the mini pumpkins and scoop out the seeds.
  2. In a skillet over medium heat, sauté onion and celery in olive oil until softened (about 5 minutes).
  3. Add ground turkey or sausage along with thyme and sage; cook until browned (7-10 minutes).
  4. In a large bowl, combine the meat mixture with bread crumbs and chicken broth. Mix in nuts and cheese if desired.
  5. Stuff each mini pumpkin with the mixture until full. Place upright in a baking dish.
  6. Cover with foil and bake for 30 minutes; then uncover and bake for an additional 10-15 minutes until golden brown.
