Ingredients
- 4 mini pumpkins (about 1 lb each)
- 1 lb lean ground turkey or sausage
- 1 medium sweet onion, finely chopped
- 2 stalks celery, chopped
- 1 cup seasoned bread crumbs
- 1/4 cup low-sodium chicken broth
- 2 tsp fresh thyme, chopped
- 2 tsp fresh sage, chopped
- 1/2 cup pecans or walnuts (optional), chopped
- 1/2 cup shredded sharp cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Cut off the tops of the mini pumpkins and scoop out the seeds.
- In a skillet over medium heat, sauté onion and celery in olive oil until softened (about 5 minutes).
- Add ground turkey or sausage along with thyme and sage; cook until browned (7-10 minutes).
- In a large bowl, combine the meat mixture with bread crumbs and chicken broth. Mix in nuts and cheese if desired.
- Stuff each mini pumpkin with the mixture until full. Place upright in a baking dish.
- Cover with foil and bake for 30 minutes; then uncover and bake for an additional 10-15 minutes until golden brown.
