Instructions
- Preheat a non-stick skillet over medium heat.
- In a bowl, mix the mashed banana, diced mangoes, eggs, honey, and milk until well combined.
- In another bowl, combine rolled oats, baking powder, cinnamon, and salt.
- Gently fold the wet mixture into the dry ingredients until just combined; do not overmix.
- Grease the skillet with oil or butter. Scoop ¼ cup of batter onto the skillet and cook until bubbles form on top (about 2-3 minutes). Flip when golden brown.
