  • 12 jumbo pasta shells
  • 1 lb lean ground turkey
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook jumbo pasta shells according to package instructions until al dente; drain gently.
  3. In a skillet over medium heat, sauté ground turkey until browned. Add spinach and cook until wilted.
  4. In a bowl, combine turkey-spinach mixture with ricotta, half of mozzarella, Parmesan, Italian seasoning, salt, and pepper.
  5. Stuff each shell generously with the filling and place in a baking dish lined with marinara sauce.
  6. Cover shells with remaining marinara and sprinkle with remaining mozzarella.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until bubbly.
