  • 2 cups all-purpose flour
  • 1/2 cup solid coconut oil
  • 1 cup fresh blueberries
  • 1/3 cup granulated sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 4 tbsp plant-based milk (almond or oat)

Instructions

  1. Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix the flour and coconut oil until crumbly. Gradually add plant-based milk until a dough forms.
  3. Chill the dough in plastic wrap for at least 30 minutes.
  4. In another bowl, combine blueberries, sugar, lemon juice, and cinnamon.
  5. Roll out half of the dough to 1/8-inch thickness and cut into desired shapes.
  6. Spoon blueberry filling onto half of each shape, fold over, and seal edges.
  7. Bake for 25–30 minutes until golden brown.
