- 1/2 cup solid coconut oil
- 1 cup fresh blueberries
- 1/3 cup granulated sugar
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 4 tbsp plant-based milk (almond or oat)
Instructions
- Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large bowl, mix the flour and coconut oil until crumbly. Gradually add plant-based milk until a dough forms.
- Chill the dough in plastic wrap for at least 30 minutes.
- In another bowl, combine blueberries, sugar, lemon juice, and cinnamon.
- Roll out half of the dough to 1/8-inch thickness and cut into desired shapes.
- Spoon blueberry filling onto half of each shape, fold over, and seal edges.
- Bake for 25–30 minutes until golden brown.
