- 14 oz firm tofu, pressed and cubed
- 3 tbsp vegan butter
- 1 cup full-fat coconut milk
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- ¼ cup low-sodium soy sauce
- 2 tbsp maple syrup or agave nectar
- Juice of 1 lemon
- Fresh cilantro, for garnish
Instructions
- Press the tofu by wrapping it in paper towels and placing a weight on top for 15 minutes to remove excess moisture.
- In a large skillet over medium heat, melt the vegan butter until bubbly. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the cubed tofu to the skillet and cook gently until golden brown on all sides (8–10 minutes).
- In a separate bowl, whisk together coconut milk, soy sauce, maple syrup, turmeric, cumin, and coriander. Pour this mixture over the tofu in the skillet.
- Simmer on low heat for about 10 minutes until the sauce thickens slightly.
- Stir in fresh lemon juice before serving and garnish with chopped cilantro.
