Description

Zucchini lasagna roll-ups are a healthy and delicious alternative to traditional lasagna, featuring tender zucchini strips filled with creamy ricotta, gooey mozzarella, and fresh basil, all enveloped in rich marinara sauce. Ingredients

  • 3 medium zucchinis (sliced lengthwise into 1/8 inch strips)
  • 1 cup whole milk ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1/4 cup fresh basil (chopped)
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Slice zucchinis into thin strips.
  2. In a bowl, combine ricotta, half of the mozzarella, Parmesan, basil, salt, and pepper.
  3. Spread about 2 tablespoons of the cheese mixture onto each zucchini strip and roll tightly.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish. Place rolled zucchinis seam-side down in the dish.
  5. Top with remaining marinara sauce and mozzarella. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly.
