- 3 medium zucchinis (sliced lengthwise into 1/8 inch strips)
- 1 cup whole milk ricotta cheese
- 1 1/2 cups shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1/4 cup fresh basil (chopped)
- Salt and pepper to taste
- 2 tsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Slice zucchinis into thin strips.
- In a bowl, combine ricotta, half of the mozzarella, Parmesan, basil, salt, and pepper.
- Spread about 2 tablespoons of the cheese mixture onto each zucchini strip and roll tightly.
- Spread a thin layer of marinara sauce on the bottom of a baking dish. Place rolled zucchinis seam-side down in the dish.
- Top with remaining marinara sauce and mozzarella. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly.
