- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 8 oz fettuccine or linguine pasta
- 1/2 cup unsalted butter
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt & pepper, to taste
Instructions
- Prepare your ingredients by gathering them all on the counter.
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper and cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add minced garlic to the drippings and sauté for about 30 seconds until fragrant.
- Stir in unsalted butter and lemon juice, scraping any brown bits from the bottom of the pan for extra flavor. Let it bubble for one minute.
- Return the chicken to the skillet, then toss in cooked pasta, Parmesan cheese, and parsley until well combined.
