Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 cup heavy cream
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 cups low-sodium chicken broth
- Salt and pepper to taste
- 2 tsp olive oil
Instructions
- Prepare all ingredients: chop spinach, mince garlic, and measure out everything.
- In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until golden brown.
- Remove chicken from the skillet. Add minced garlic to the same pan; sauté until fragrant, then stir in fresh spinach until wilted.
- Pour in chicken broth, bring to a boil, then stir in orzo pasta. Reduce heat and simmer for about 10 minutes until the orzo absorbs most of the liquid.
- Lower the heat further; add heavy cream and Parmesan cheese. Stir until smooth.
- Return cooked chicken back into the skillet with the creamy orzo mixture and let simmer together for a few minutes.
- Serve hot, garnished with extra Parmesan if desired.
