  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent; add garlic and cook for an additional minute.
  2. Add diced carrots and celery to the pot; stir occasionally until slightly softened (about 5 minutes).
  3. Pour in the vegetable broth, scraping any flavorful bits from the bottom of the pot. Bring to a gentle simmer.
  4. Stir in shredded turkey, thyme, salt, and pepper. Let the soup simmer for about 20 minutes.
