  • 2 cups cooked turkey, shredded
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • ¼ cup fresh parsley, chopped

Instructions

  1. In a large pot over medium heat, heat 2 tablespoons of olive oil. Add chopped onion and minced garlic; sauté until softened (about 5 minutes).
  2. Stir in diced carrots and celery; cook for another 5 minutes until slightly softened.
  3. Add shredded turkey to the pot and mix well.
  4. Pour in chicken broth and add thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
  5. Lower the heat and let the soup simmer uncovered for 30-40 minutes.
  6. Just before serving, stir in fresh parsley for brightness.
