  • 4 cups mixed greens (romaine, arugula)
  • 1 cup bell peppers, sliced (red and yellow)
  • 1 cup cucumber, julienned
  • 1 cup carrots, shredded
  • 1 cup red cabbage, thinly sliced
  • ½ cup fresh herbs (cilantro or mint)
  • ⅓ cup peanut butter (creamy or chunky)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil

Instructions

  1. Wash and prepare all vegetables: chop bell peppers into thin strips, julienne cucumbers and carrots, and finely shred red cabbage.
  2. In a large bowl, combine mixed greens, bell peppers, cucumbers, carrots, red cabbage, and fresh herbs.
  3. In a small bowl or jar, whisk together peanut butter, soy sauce, lime juice, honey (or maple syrup), and sesame oil until smooth.
  4. Just before serving, drizzle the peanut dressing over the salad and toss gently to coat without crushing the greens.
  5. Serve immediately and enjoy garnished with additional peanuts if desired.
