- 1 cup bell peppers, sliced (red and yellow)
- 1 cup cucumber, julienned
- 1 cup carrots, shredded
- 1 cup red cabbage, thinly sliced
- ½ cup fresh herbs (cilantro or mint)
- ⅓ cup peanut butter (creamy or chunky)
- 2 tbsp low-sodium soy sauce
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
Instructions
- Wash and prepare all vegetables: chop bell peppers into thin strips, julienne cucumbers and carrots, and finely shred red cabbage.
- In a large bowl, combine mixed greens, bell peppers, cucumbers, carrots, red cabbage, and fresh herbs.
- In a small bowl or jar, whisk together peanut butter, soy sauce, lime juice, honey (or maple syrup), and sesame oil until smooth.
- Just before serving, drizzle the peanut dressing over the salad and toss gently to coat without crushing the greens.
- Serve immediately and enjoy garnished with additional peanuts if desired.
