  • 2 yellow Aji Amarillo peppers, chopped
  • 8 oz cream cheese (full-fat)
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add them to the skillet.
  2. Cook each side for about 5-7 minutes until golden brown and cooked through; remove from skillet and let rest.
  3. In the same skillet, sauté chopped onions and minced garlic for about 3 minutes until softened.

  5. Slice rested chicken and return it to the skillet, allowing it to simmer for about 5 minutes.
