  • 1 lb lean ground beef
  • 1 cup finely chopped Brussels sprouts
  • 1/2 cup plain breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 large egg (room temperature)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, chopped Brussels sprouts, breadcrumbs, Parmesan cheese, minced garlic, egg, parsley, salt, and pepper. Mix thoroughly by hand.
  3. Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes until golden brown and firm to the touch.
  5. While baking, heat tomato sauce in a saucepan over medium heat and stir in balsamic vinegar.
  6. Once meatballs are finished baking, gently add them to the simmering sauce for an additional 10 minutes.
