- 1 cup ricotta cheese

Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplants lengthwise into ¼ inch thick strips. Place the slices on paper towels, sprinkle with salt, and let sit for 15 minutes.
- In a bowl, mix ricotta cheese, Parmesan cheese, garlic, basil, salt, and pepper until smooth.
- Spoon filling onto one end of each eggplant slice and roll tightly. Arrange seam-side down in a greased baking dish.
