  • 1 medium butternut squash (about 2 lbs)
  • 1 lb lean ground turkey
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • ¼ cup freshly grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place the squash cut-side down on a parchment-lined baking sheet and roast for about 25-30 minutes until tender.
  4. While the squash roasts, heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté until translucent.
  5. Add ground turkey to the skillet, breaking it up as it cooks until no longer pink (about 5-7 minutes). Season with paprika, thyme, salt, and pepper.
  6. Once the turkey is cooked through, scoop out some roasted squash flesh to mix into the turkey mixture.
  7. Serve hot, topped with Parmesan cheese if desired.
