- 1 lb lean ground turkey
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 medium yellow onion, chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- ¼ cup freshly grated Parmesan cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
- Place the squash cut-side down on a parchment-lined baking sheet and roast for about 25-30 minutes until tender.
- While the squash roasts, heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté until translucent.
- Add ground turkey to the skillet, breaking it up as it cooks until no longer pink (about 5-7 minutes). Season with paprika, thyme, salt, and pepper.
- Once the turkey is cooked through, scoop out some roasted squash flesh to mix into the turkey mixture.
- Serve hot, topped with Parmesan cheese if desired.
