  • 1 cup dried red kidney beans (soaked overnight)
  • 1 lb spicy sausage (Andouille preferred), sliced
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 14 oz canned diced tomatoes
  • 2 bay leaves
  • 1 tsp cayenne pepper (adjust to taste)
  • 4 cups low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Soak the dried red kidney beans overnight in plenty of water.
  2. In a large pot over medium heat, sauté the onion, bell pepper, celery, and garlic until softened (about 5 minutes).
  3. Add the sliced sausage and cook until browned.
  4. Stir in soaked beans, canned tomatoes, chicken broth, bay leaves, cayenne pepper, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low and simmer for 1-2 hours until beans are tender. Remove bay leaves before serving.
  6. Serve hot over fluffy white rice.
