- 1 cup dried red kidney beans (soaked overnight)
- 1 lb spicy sausage (Andouille preferred), sliced
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 14 oz canned diced tomatoes
- 2 bay leaves
- 1 tsp cayenne pepper (adjust to taste)
- 4 cups low-sodium chicken broth
- Salt and pepper to taste
Instructions
- Soak the dried red kidney beans overnight in plenty of water.
- In a large pot over medium heat, sauté the onion, bell pepper, celery, and garlic until softened (about 5 minutes).
- Add the sliced sausage and cook until browned.
- Stir in soaked beans, canned tomatoes, chicken broth, bay leaves, cayenne pepper, salt, and pepper. Bring to a gentle boil.
- Reduce heat to low and simmer for 1-2 hours until beans are tender. Remove bay leaves before serving.
