  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk (or almond milk)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsweetened coconut flakes
  • 1 cup fresh pineapple, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together cottage cheese, eggs, melted butter, milk, and vanilla until smooth.
  3. In another bowl, whisk flour, baking powder, sugar, and coconut flakes together.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the chopped pineapple.
  6. Spoon batter into muffin cups about three-quarters full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Allow cooling slightly before serving.
