- 3 tbsp kosher salt
- 2 tsp black pepper
- ¼ cup fresh rosemary, chopped
- ¼ cup fresh thyme, chopped
- ¼ cup fresh sage, chopped
- ½ cup unsalted butter, softened
- 8 cups bread cubes (sourdough or whole grain)
- 1 large onion, diced
- 3 stalks celery, chopped
- 2 cups low-sodium chicken broth
- 1 cup dried cranberries (optional)
Instructions
- Preheat oven to 325°F (163°C). Remove giblets from turkey; rinse under cold water and pat dry.
- Rub salt generously inside and outside the turkey. Follow with cracked black pepper.
- Mix softened butter with minced garlic and fresh herbs; massage under the turkey skin.
- For stuffing, sauté onion and celery until soft. Mix with bread cubes and moisten with chicken broth.
- Stuff the turkey cavity lightly (optional). Place turkey breast-side up on a roasting rack in a pan.
- Roast for about 13-15 minutes per pound until internal temperature reaches 165°F (74°C), basting periodically.
- Let rest for 30 minutes covered loosely before carving.
