  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup bell peppers, chopped (any color)
  • 1/2 cup onion, chopped
  • Salt & pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie dish and press against the sides.
  3. In a skillet over medium heat, heat olive oil. Sauté chopped onion and bell peppers until soft (about 5 minutes).
  4. In a bowl, whisk eggs and heavy cream together; season with salt and pepper.
  5. Stir in sautéed vegetables, chopped spinach, and shredded cheddar cheese until well combined.
  6. Pour the mixture into the prepared pie crust.
  7. Bake for 35-40 minutes until the center is set and lightly golden on top.
