  • 1 cup small pasta (like ditalini)
  • 2 cups fresh spinach or kale
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, warm the olive oil. Add onions, carrots, and celery; sauté for about 5-7 minutes until softened.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add canned tomatoes with juice and vegetable broth; bring to a gentle simmer.
  4. Incorporate rinsed white beans and pasta; cook according to package instructions (10–12 minutes) until pasta is al dente.
  5. Stir in spinach or kale during the last few minutes of cooking until wilted. Season with thyme, basil, salt, and pepper to taste.
