  • 4 cloves fresh garlic, minced
  • 1 cup full-fat Greek yogurt
  • 1 medium English cucumber, grated and drained
  • 2 tablespoons fresh dill, chopped
  • Juice of 1 lemon (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper.
  2. In a bowl, mix minced garlic, olive oil, lemon juice, salt, and pepper. Brush this marinade onto the chicken while cooking.
  3. Grill each side for about 6-7 minutes until golden brown and juices run clear.
  4. In another bowl, combine Greek yogurt with grated cucumber, minced garlic, dill, lemon juice, salt, and pepper for the tzatziki sauce.
  5. Once the chicken has cooled slightly, shred or chop into bite-sized pieces and mix with the tzatziki sauce.
  6. Serve chilled or at room temperature. Garnish with extra dill if desired.
