  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 can (5 oz) canned tuna in water, drained
  • 1 cup fresh cucumber, diced
  • 1/2 cup red onion, diced
  • 1/3 cup mayonnaise or Greek yogurt
  • 1 tsp Dijon mustard
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp fresh parsley or dill, chopped
  • Salt & pepper to taste

Instructions

  1. In a large bowl, combine the drained chickpeas and canned tuna. Use a fork to break apart any large chunks of tuna.
  2. Add the diced cucumber and red onion to the bowl; mix until evenly distributed.
  3. In a separate bowl, whisk together mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, salt, and pepper until smooth.
  4. Pour the dressing over the chickpea-tuna mixture and gently fold until all ingredients are well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
