  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • Salt and black pepper to taste
  • 1 small zucchini, chopped (optional)
  • Fresh parsley for garnish

Instructions

  1. Prepare your ingredients by washing and chopping all vegetables into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté the diced onions until translucent.
  3. Add the chicken breasts to the pot and cook until lightly browned on both sides.
  4. Pour in the chicken broth while scraping any bits from the bottom of the pot.
  5. Stir in carrots, celery, zucchini (if using), garlic, thyme, salt, and pepper. Simmer for about 15 minutes until veggies are tender.
  6. Stir in fresh lemon juice and chopped parsley just before serving.
