  • 8 medium tomatillos (husked and rinsed)
  • 2 medium jalapeños (stemmed and chopped)
  • 1 cup fresh cilantro leaves (packed)
  • 1/4 cup freshly squeezed lime juice
  • 2 garlic cloves (peeled)
  • 1 small white onion (finely chopped)
  • 1 tsp kosher salt

Instructions

  1. Rinse all vegetables under cold water. Remove husks from tomatillos and stems from jalapeños. Coarsely chop onions and garlic.
  2. In a skillet over medium heat, roast tomatillos and jalapeños until slightly charred, about 5-7 minutes.
  3. Transfer roasted vegetables to a blender. Add cilantro, garlic, lime juice, and salt. Blend until smooth but retain some texture.
  4. Taste and adjust seasoning if necessary.
