- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh broccoli florets
- 1 cup orzo pasta
- 3 cups low-sodium chicken broth
- ½ cup heavy cream
- 3 garlic cloves, minced
- ½ cup grated Parmesan cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; sear for about 5-7 minutes on each side until golden brown. Remove from the skillet.
- In the same skillet, add minced garlic and broccoli; sauté for 3-4 minutes until broccoli is bright green.
- Pour in chicken broth, bring to a boil, then stir in orzo pasta. Reduce heat to low; cover and simmer for about 10-12 minutes until orzo absorbs most of the broth.
- Chop cooked chicken into bite-sized pieces. Stir in heavy cream and Parmesan cheese until melted, then add chicken back to the skillet.
- Gently combine all ingredients; season with additional salt and pepper if needed. Allow to meld over low heat for another 2-3 minutes before serving.
