  • 1 cup pearl barley
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 tsp dried thyme (or 2 sprigs fresh thyme)
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear beef chunks seasoned with salt and pepper until browned on all sides.
  2. Remove beef; add onions, carrots, celery, and garlic to the skillet. Cook until softened (about 5 minutes).
  3. Transfer seared beef back to the slow cooker. Add sautéed vegetables, beef broth, barley, thyme, bay leaf, salt, and pepper. Stir well.
  4. Set slow cooker on low for 8 hours or high for 4 hours. Avoid lifting the lid too often.
  5. About 30 minutes before serving, adjust seasoning if needed. Ensure barley is tender yet chewy.
