  • 2 cups butternut squash, diced (about 1 medium squash)
  • 4 oz soft goat cheese, crumbled
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the pie crust on a floured surface until about 12 inches wide.
  3. On a baking sheet, toss diced butternut squash with olive oil, salt, pepper, and brown sugar. Roast for approximately 25 minutes until tender and caramelized.
  4. In a bowl, combine the roasted squash, crumbled goat cheese, chopped herbs, salt, and pepper.
  5. Transfer the pastry crust to a parchment-lined baking sheet. Spoon the filling into the center, leaving a 2-inch border. Fold the edges over the filling.
  6. Brush the edges with olive oil or an egg wash for a golden finish. Bake for 30-35 minutes until golden brown.
