- 8 oz gluten-free noodles (such as brown rice noodles)
- 2 medium carrots, diced
- 2 celery sticks, diced
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 2 sprigs fresh thyme
- 1/4 cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened.
- Stir in minced garlic and thyme; cook for about 1 minute until fragrant.
- Add chicken breasts and pour in chicken broth until covered. Bring to a simmer and cook for 15-20 minutes until the chicken is cooked through.
- Remove chicken, shred it once cool enough to handle, and return it to the pot.
- Stir in gluten-free noodles along with salt and pepper; simmer for another 10-12 minutes until noodles are tender.
- Remove from heat and stir in fresh parsley before serving.
