  • 8 oz gluten-free noodles (such as brown rice noodles)
  • 2 medium carrots, diced
  • 2 celery sticks, diced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 2 sprigs fresh thyme
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened.
  2. Stir in minced garlic and thyme; cook for about 1 minute until fragrant.
  3. Add chicken breasts and pour in chicken broth until covered. Bring to a simmer and cook for 15-20 minutes until the chicken is cooked through.
  4. Remove chicken, shred it once cool enough to handle, and return it to the pot.
  5. Stir in gluten-free noodles along with salt and pepper; simmer for another 10-12 minutes until noodles are tender.
  6. Remove from heat and stir in fresh parsley before serving.
