  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup Kalamata olives, pitted and halved
  • 1 tsp dried oregano
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and chop the cherry tomatoes, cucumber, and red onion.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives.
  3. Drizzle olive oil and lemon juice over the salad mixture. Add dried oregano, salt, and pepper; mix gently.
