  • 8 oz fresh lobster meat, cooked and chopped
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1 cup all-purpose flour
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 4 tbsp unsalted butter
  • Grated Parmesan cheese for serving

Instructions

  1. In a bowl, combine lobster meat, ricotta, garlic, lemon zest, parsley, salt, and pepper. Mix until well combined.
  2. In a separate bowl, mix flour and eggs to form a smooth dough. Knead for about 10 minutes until elastic. Cover and let rest.
  3. Roll out the dough into thin sheets (about 1/16-inch thick). Cut into squares.
  4. Place a small mound of filling onto each square, moisten edges with water, fold over to seal. Cut into individual ravioli.
  5. Boil salted water in a pot over medium heat. Cook ravioli for 3-4 minutes until they float.
  6. In a skillet, melt butter over medium heat. Toss cooked ravioli in butter until coated. Serve hot with grated Parmesan on top.
