  • 1 ripe avocado
  • 2 large flour tortillas
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 1 cup romaine lettuce, shredded
  • 2 tbsp ranch or cilantro lime dressing (optional)

Instructions

  1. Season chicken breasts with salt and pepper. Heat a skillet over medium heat and cook chicken for 6-7 minutes on each side until golden brown and cooked through.
  2. While the chicken cooks, chop cherry tomatoes, slice red onion, and dice avocado.
  3. Once cooked, let the chicken rest for a few minutes before slicing it into strips.
  4. Lay a tortilla flat and layer with lettuce, sliced chicken, avocado, tomatoes, and onions. Drizzle with dressing if desired.
  5. Fold in the sides of the tortilla and roll tightly from one end to create a secure wrap.
