  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 ripe avocados
  • 4 large flour or whole wheat tortillas
  • 1 red bell pepper, sliced
  • 2 cups romaine lettuce, torn into pieces
  • ½ cup plain Greek yogurt
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  2. While the chicken cooks, slice the red bell pepper and tear the romaine lettuce into bite-sized pieces.
