Ingredients
- 3–4 boneless, skinless chicken breasts (cooked and shredded)
- 2 cloves fresh garlic (minced)
- 1 cup enchilada sauce (store-bought or homemade)
- 6 medium flour tortillas
- 2 cups shredded Monterey Jack cheese
- 1 cup sour cream
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, shred cooked chicken into bite-sized pieces.
- Sauté chopped onions and minced garlic in a skillet over medium heat until translucent.
- In another bowl, mix shredded chicken with 1 cup of enchilada sauce until well coated.
- In a greased baking dish, layer half of the tortillas, followed by half of the chicken mixture, then sprinkle with cheese. Repeat the layers once more.
- Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
