- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers (mixed colors), chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and set aside to cool.
- While the pasta cooks, chop the cherry tomatoes, cucumber, and bell peppers into bite-sized pieces.
- In a small bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper.
- In a large bowl, combine the warm pasta with chopped veggies and pour the dressing over it while still warm. Toss to combine.
- Cover and refrigerate for at least 30 minutes to allow flavors to blend.
- Serve chilled or at room temperature; adjust seasoning if needed.
