- 3 cloves fresh garlic, minced
- 1 inch fresh ginger, peeled and minced
- ½ cup low-sodium soy sauce
- ¼ cup brown sugar
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions
- Gather all ingredients on your counter. Mince garlic and ginger.
- In a bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger until well combined.
- Place chicken breasts in the bottom of the crockpot and pour the sauce over them.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Remove chicken, shred it with two forks, then mix cornstarch slurry into the remaining sauce in the crockpot until thickened.
- Return shredded chicken to the pot and stir until fully coated.
