  • 1 cup fresh broccoli florets
  • 1 cup sliced red bell peppers
  • 2 tbsp balsamic vinegar
  • 1 cup sharp cheddar cheese, grated
  • 2 slices whole wheat bread
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss broccoli florets and sliced red peppers with olive oil, balsamic vinegar, salt, and pepper. Spread evenly on the baking sheet and roast for about 20 minutes until tender.
  3. Butter one side of each slice of whole wheat bread. Flip them over and layer sharp cheddar cheese generously on the unbuttered side.
  4. Once vegetables are done roasting, pile them atop one cheesy slice and top it with the other slice to form a sandwich.
  5. Heat a skillet over medium heat and cook the sandwich until golden brown on both sides, about 3-4 minutes per side.
  6. Allow to cool slightly before slicing in half and serving.
