  • 2 lbs beef chuck roast, trimmed and diced
  • 3 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 2 stalks celery, chopped
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 14 oz canned diced tomatoes (in juice)
  • 2 bay leaves
  • 1 tsp dried thyme
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté onions in oil until translucent. Add garlic and cook until fragrant.
  2. Add beef chunks and brown on all sides.
  3. Pour in beef broth, diced tomatoes, carrots, potatoes, celery, bay leaves, thyme, salt, and pepper; stir to combine.
  4. Bring to a boil. Reduce heat to low and cover partially. Simmer for about 1.5 hours or until beef is tender.
  5. Stir in freshly chopped parsley before serving.
