  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two small loaf pans by greasing them or lining with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, cinnamon, and salt.
  4. In another bowl, beat eggs with granulated and brown sugars until creamy. Mix in the grated zucchini, vanilla extract, and vegetable oil or melted butter.
  5. Gradually fold the wet mixture into the dry ingredients until just combined—lumps are okay!
  6. Gently fold in the chocolate chips.
  7. Divide the batter evenly between prepared pans and smooth the tops.
  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool in pans for 10 minutes before transferring to wire racks.
