  • 2 lbs Yukon Gold potatoes, peeled and chopped
  • 4 tbsp unsalted butter

Instructions

  1. Sear the short ribs: Season with salt and pepper. In a large pot over medium-high heat, brown each side for 3-4 minutes. Remove and set aside.
  2. Sauté the aromatics: In the same pot, add onion, carrots, celery, and garlic. Cook until softened.
  3. Deglaze with wine: Add red wine to the pot, scraping up browning bits. Simmer until reduced by half (about 5-7 minutes).
  4. Add broth & cook ribs: Return short ribs to the pot and add beef broth. Simmer gently for 2-3 hours until tender.
  5. Prepare mashed potatoes: Boil potatoes in salted water until tender (15-20 minutes). Drain and mash with butter, heavy cream, and parmesan until smooth.
  6. Serve: Shred short ribs into bite-sized pieces and serve over mashed potatoes. Garnish as desired.
