- 2 ripe tomatoes, diced
- 1 cup fresh basil leaves, chopped
- 8 oz fresh mozzarella cheese, torn into small pieces

Instructions
- Preheat your oven to 400°F (200°C). Slice the baguette diagonally into 1-inch pieces and arrange on a baking sheet.
- Toast the bread in the oven for 5-7 minutes until golden brown.
- While the bread is toasting, combine diced tomatoes, chopped basil, olive oil, salt, and pepper in a bowl.
- Once the bread is toasted, remove it from the oven and let cool slightly. Spoon the tomato-basil mixture onto each slice.
- Top each bruschetta with pieces of fresh mozzarella.
- Return to the oven for an additional 3-5 minutes until the cheese begins to melt.
