  • 1 crusty baguette
  • 2 ripe tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 8 oz fresh mozzarella cheese, torn into small pieces
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the baguette diagonally into 1-inch pieces and arrange on a baking sheet.
  2. Toast the bread in the oven for 5-7 minutes until golden brown.
  3. While the bread is toasting, combine diced tomatoes, chopped basil, olive oil, salt, and pepper in a bowl.
  4. Once the bread is toasted, remove it from the oven and let cool slightly. Spoon the tomato-basil mixture onto each slice.
  5. Top each bruschetta with pieces of fresh mozzarella.
  6. Return to the oven for an additional 3-5 minutes until the cheese begins to melt.
  7. Serve warm and enjoy!
